Khichdi is one of my favorite rice-lentils based one-pot recipes. I love making it as it is healthy, nutritious and quick to make after a long tiring day!
I call it Navratan as I put nine ingredients in it to make it healthy. You can add any veggies you like. Usually, the veggies that I add are carrots, capsicum, cauliflower, peas, potatoes and green beans.
This recipe is easily customizable, so feel free to add ginger, garlic, green chilies or anymore spices if you wish. You can also change the consistency as thick or as thin as you’d like by adding water.
INGREDIENTS
1 cup basmati rice, soaked for 15–30 minutes
½ cup Mung lentil , soaked for 15–30 minutes
1 teaspoons cumin seeds
6 cups water
1 ½ teaspoons salt
1 teaspoon turmeric
Veggie Mix: Peas, Corn, Bell pepper, Green beans, Potatoes, Tomatoes
Recipe
Soak the basmati rice and moong dal in water for 15-30 minutes. Drain, rinse and set aside.
In a pan, add cumin seeds. When the cumin seeds turn brown, add the Veggie Mix and let it saute for 5 min.
Add rice and lentils (mung dal) along with the 6 cups of water, salt and turmeric.
Secure the lid, close the pressure valve and cook for 20 minutes at high pressure.
Naturally release pressure for 20 minutes. Open the valve to release any remaining pressure.
Serve each bowl with pickle, papad or Vegan yogurt.
